INGREDIENTS: 

Cooking spray

1 cup unsweetened cocoa powder 

2 1/2 cups all-purpose flour

2 cups sugar

1 1/2 teaspoons baking powder

1 teaspoon baking soda

1 teaspoon salt

3 large eggs, at room temperature

3/4 cup vegetable oil

1/2 cup sour cream

2 teaspoons vanilla extract

PROCESS

Preheat the oven to 350 degrees Fahrenheit. Cover two 9-inch round baking tins with cooking spray and line the bottom with parchment paper.

Whisk cocoa powder and 1 1/2 cups boiling water in a medium bowl until smooth; left aside. Whisk flour, sugar, yeast, baking powder and salt in a large bowl until smooth. Add eggs, vegetable oil, cream and vanilla and beat with a mixer on medium speed until smooth, about 1 minute. Reduce mixer speed to minimum; Whisk the cocoa mixture evenly until smooth and then finish with a rubber spatula. (The dough becomes thin.)

Divide the flour into prepared pans and tap against the counter to help the flour settle. Bake until a toothpick inserted in the middle is clean, 30 to 40 minutes. Transfer to a wire rack and allow to cool for 10 minutes, then run a knife along the edge of the mold and turn the cakes on the shelves to cool completely. Remove the parchment. Cut the edges of the cake evenly if desired with a long, grainy knife.
